    Assessment Criteria

                                                     ii.      Test

                                                   iii.      Class Participation


    Work will only be accepted if it is COMPLETE.  Credit will NOT be given for incomplete work.


    Do Not Be Tardy – or you will wash dishes, mop and scrub floors in the culinary kitchen. Tardiness will not be tolerated.


    Plagiarized work will NOT be accepted and will receive 0 points for BOTH parties.


    Absentee work will be accepted following the student’s return to class, if the absence is APPROVED.  You have twice the number of days you were excused to complete the missed work.


    Grades will use the following scale:


    100 – 85  A

    84 – 75    B

    74 – 70    C

    69 – 60    D

    59 and below F

    Course Objectives



    Upon completion of this course, students will be able to:




    Ø  To understand the operations and function of culinary operations plus being proficient in multi-cooking techniques.



    Ø  Use basic vocabulary related to culinary.

    Ø  Safety and sanitation in a chef kitchen.

    Ø  Food preparation.

    Ø  Identify dietary elements of healthy lifestyle.

    Ø  Perform functions common to bakery and pastry division.

    Ø  Perform functions common to hot foods.

    Ø  Demonstrate math skills in culinary arts.

    Ø  Demonstrate communication and professional skills.


    Expectations and Choices:


    ü  You are expected to follow all written and oral directions.

    ü  You are expected to BE IN THE CLASSROOM  when the bell rings.

    ü  Coming to class unprepared will cause you to LOSE Points.

    ü  Profanity will NOT be tolerated.


    If you CHOOSE not to follow the Rules:


    ü  I will talk privately with you the first time ONLY.

    ü  We will call your parent or guardian!

    ü  If the behavior continues you will be referred to Mr. Kuiper

    ü  If you CHOOSE not to follow the Rules, it can and will be reflected in your Participation Grade!
